Phytic acid: is really of little concern except perhaps for Vegetarians since they do "bind " Iron and other nutrients. So called "Overnight Oats" are "safe" IT SOUNDS TO ME LIKE YOU ARE TRYING SOME FAD DIET! (Perhaps to loose weight??) If you are planning on "living on" "whole grains" alone FORGET IT! Nothing is "healthy" if consumed without a well balanced diet! My opinion only Good Luck Dr Z
