Understand basics: If you truly have celiac disease, your body makes new antibodies every time you consume gluten. In a quirk of the immune system, these antibodies attack your tissues, like those in your intestines as if they were germs, causing damage. If you have not had the proper testing to show such antibodies, & confirm celiac, you should. If you just have a mild food allergy, exposure is less important.
