Many factors: gallstones form when small crystals develop in bile, usually from supersaturation with fat. Bile stasis (when bile sits in the gallbladder) also contributes. You only have one gallbladder so you can only get gallbladder disease once. Spicy foods usually don't contribute to gallbladder disease but high fat foods can bring on a gallbladder "attack".
