Bone, joint or tendo: Bone, joint or tendon could explain this. I suspect a trigger finger could explain the freezing or sticking . I can't tell how many of you fingers you have sticking. Sometimes you can have a tendon injections which is actually a pulley of tendon

?cold fingers: As I understand your question, your fingers often feel abnormally cold,; try taking omega 3 fish oil. Also get checked by a rheumatologist for Raynauds syndrome as vasodilation medications often help.
