Allergy to detergent: Check the detergent that is getting used for your bed sheets. You may be allergic to something in that product. Try Ivory Snow laundry detergent, it has less additives.

Itching: Possible allergy to the sheets or laundry detergents. Try over the counter Benedryl or hydrocortisone if it works get non allergenic detergents or consult dermatologist.
