Not the key: For decades, the "pop" wisdom is that fried foods containing a great deal of this-or-that type of fat are "bad for you" and this actually matters. Especially for the past 15 years, this is extensively questioned and there's even much skepticism about whether we should ever have taught this. I'd urge you to exercise intensively, eat sensibly, stay trim, and not focus too much on food choices.
