Chemistry & Health: Mono saturated fats are defined by having only one methyl group and the remainder of their carbon chain contain double bonds and no hydrogen atoms attached.That's chemistry. They are neutral in raising the LDL cholesterol & liquid at body temp.Trans saturated fatty acids are saturated fats- having lots of hydrogen atoms & the double bonds are in a trans configuration. They raise LDL , solid @ 98.6.
