I am a 170 pound male that wants to do strength training to maximize its health benefits. if i use weight machines, is there a particular weight i should aim for? how should i progress the exercises

Start low: start low weight and multiple repetition and increase the weight slowly when you can do 15 repetition three time by 5 lb. each time it really depend on which muscle you are trying to exercise, the start weight may vary
