Do ppis completely stop production of stomach acid? if so, how can food continue to be digested? wouldn't there be increased risk of food borne illnes

Several issues: Of note there are increased risk of GI infectious with PPI use, the strongest association being a bacteria known as "c.diff". There are lesser associations with infections related to the more common food borne bacteria like Campylobacter and Salmonella. PPI's suppress but don't completely stop all gastric acid secretion. Food digestion isn't particularly impaired but certain micronutrients are.
