Omeprazole: A higher dose will be more effective in reducing stomach acid, and may, depending on your therapeutic threshold, last longer. However higher doses = higher chance of side effects which can include gas, diarrhea or constipation. Too high a dose and you lose the protective effects of stomach acid against bacteria, leading to a higher risk of c. Difficile and ppi pneumonia with long time use.

No: The most important aspect is reducing gerd symptoms to reduce the chronic esophagitis causing the barrett's changes that increase risk of esophageal cancer. Some patients need 20 mg others need 40 mg omeprazole. Every patient is different. It won't interfere with digestion.
