Good question: The acidity is maximum as you start eating, when all the acid pumps are triggered by smell of food, chewing, etc. Food may or may not buffer the acid, based on the food acidity. The acid pumps are then turned down as the stomach fills up. In other words the acidity is max when we start eating and minimum after a meal. Or it should be.
