I do the standard plank exercise, i am 6'3 around 140lbs, would doing the plank everyday be overtraining or would this be beneficial and advisable?

Probably: Unlikely to result in overtraining issues, as though who regularly practice Yoga, do planks frequently without issue. Though also realize, it's not necessary to do core exercises every day.

Plank Away!: There is no problem with doing planks every day. Your core can not b strong enough.
