what exercises use all of your muscles?

None uses all: As there are muscles all over and tiny, including inside your ear! But of the "non-classic" exercises/lifts the burpee probably optimizes muscle recruitment. Of the classics, the squat, deadlift and olympic lifts(clean and jerk, snatch) all have significant muscular recruitment.
