Here's why...: New and sudden onset edema should prompt evaluation for heart failure, liver failure and nephrotic kidney disease. Sounds like those have already been ruled out. It is also possible that you could have a systemic inflammatory or hormonal response that produces some vascular leakiness. Failing that you may just have eaten too much salt.
