Fiber: High fiber content can slow gastric emptying as can high fat content foods as well.

Slows: Insoluble fiber moves out of the stomach fast unless there is fat, protein, or soluble fiber to slow it down. Soluble fiber that holds water slows down stomach emptying, especially when eaten with lots of fluid and some fat. Soluble fiber is used to slow down emptying in people with rapid gastric emptying or dumping syndrome.

Not just fiber: Any meals other than the food given to swallow for the study, may interact with the results of the study. May give a slower time of gastric emptying and the physician will report as abnormal when in fact is normal. Follow the instructions before getting test done. Good luck!
