Gluten sensitivity: Firstly gluten sensitivity is now known to comprise a wide range of symptoms and findings. There are many patients who feel better on a gluten- free diet but do not have celiac disease. Also, because gluten sensitivity is not an allergy, one would not expect to see a positive allergy test to gluten products.

Eating better food: In general some people "respond" to limiting gluten despite not having the disease because they are now paying attention to food labels. Gluten containing foods tend to be highly refined or processed. So by avoiding these one is eating more real food.
