Processing of foods: There is good reason to suspect a multitude of causes. One is the dramatic increase in processed foods containing genetically modified soy and corn and sugar beets. In addition, there is much more exposure to wheat, which has been bred to contain higher gluten since it creates higher yields for farmers. The other chemical and toxic exposures in our environment also create a heavy burden.
