What is the difference between a peripheral vision test where you detect motion (finger snap) and one where you detect color(tell me when you see red)?

Not much: All gross peripheral vision tests like you describe can find large defects but cannot detect small ones. The red detection might be slightly more sensitive than the other. If there is a question, a formal visual field test with a machine should be performed.
