Many things : They are looking for swollen tonsils, nodules or bumps on the base of tongue. If you cannot bring tongue straight forward it may be a neurological sign. Color, hygiene and other visible pathologies. Many other reasons. Hard to know from internet question.

Disease: When i perform an oral cancer screening, i always look at the tongue for changes. Doctors depress your tongue to look at your throat. It is my feeling based on research studies, that many of the diseases start in the mouth.

Lesions and masses: The doctor is screening for any abnormal bumps or lumps. If there is anything present that is unusual, then a biopsy would be recommended. It sounds like you are fine.
