Less than 1 in 100: In an otherwise healthy person the risk of death after gall bladder surgery is less than 1 in 100. The risk is much higher if the person is very sick or frail. I don't know if any reliable statistics exist on how often someone actually dies during the operation but i suspect it is quite rare.
