Don't expect magic: This is the red stuff in beets and some other foods. Pretty much any chemical could perhaps impact the enormously complex inflammation / immune system in some way, and there's no shortage of petri-dish science showing a multiplicity of effects. Beets are yummy, but if you think eating them is going to miraculously impact your health for the better, you're setting yourself up for disappointment.
