Shouldn't be: Anaphlyaxis is an immediate hypersensitivity reaction and would not occur months later.

No: Anaphylactic shock can only occur while you are actively exposed to the thing you are allergic too. It will not happen months after an exposure. It is more likey that an accidental exposure occurred with out the person realizing it.If they had a reaction with out a known exposure.
