Could be many things: This is either unrecognized gluten sneaking in or another GI malady such as lactose intolerance. At your age should see your GI doc for re-eval.

Check food labels: You could be missing hidden gluten. Are you careful going out to eat (foods that are gluten free that are cooked along side gluten containing foods)? Your doctor could check antibodies to see if your celiac is under control, if not you may be unknowingly eating gluten.

Other triggers: Unfortunately there are many items you wouldn't ever believe have gluten (wheat) but if you read the fine print. You can also have similar symptoms with cross reacting food allergies, and to food additives. Red #40 food dye triggers these symptoms in enough people that it is banned in Europe. Your doc can test for some issues, but you may find out more by keeping a food/symptom diary.
