Hydrogenation: Soybean oil is too unstable to be used in manufacturing, so companies "hydrogenate" it [forcing hydrogen gas into it at high pressure) to extend its shelf life. Voila -- partially hydrogenated soybean oil. Unfortunately this process also makes trans fats -- not good for your heart or blood vessels.
