Good nutrition!: Inulins are a group of natural polysaccharides produced by many types of plants. They belong to a class of dietary fibers known as fructans. Inulin is used by some plants as a means of storing energy. Most plants that synthesize and store inulin do not store starch. Due to the body's limited ability to process fructans, inulin has minimal impact on blood sugar making it suitable for diabetics.

Soluble Fiber: "inulin is a sweet food additive, low in calories, creamy, fat-free and improves absorption of minerals. It has a low glycemic index, and it isn't absorbed , it does not increase glucose levels." http://ic.Steadyhealth.Com/inulin_fiber.Html.
