Takes Time: Iron deficiency anemia treatment could take time to show improvement of blood parameters (hgb, MCV , platelet count) up to 2-3 months, longer if there is ongoing blood loss which sometimes needs to be addressed. Intravenous iron replacement is quicker and is indicated if one cannot absorb oral iron or needs rapid improvement.

Only 1 week!: You have to replace the iron stores first. No reason to check a CBC at one week. Recheck it in 3 months. Good luck.

Too soon: It is too soon to see the platelets come back to normal. More typical would be one to three months depending on how bad the ida.
