How come you get salmonella from an undercooked piece of meat?

Processing: When meat is processed it is often contaminated by fecal matter from the animals and if the salmonella is not killed by appropriate heating it can infect you. The contamination has to be significant unless you have low gastric acidity or are taking antibiotics for another reason.
