Sleep physiology: Swallowing during sleep is a normal phenomenon. The act clears fluid from the throat that might have gotten there from acid reflux. It is not under voluntary control. The body does what it needs to do. Frequency is dependent on many factors.

Yes: There is no set number of times a person swallows per night. Increased saliva production will increase the amount , food in the stomach may trigger swallowing as well.
