Ankle scope: Depending on how involved the procedure is but usually you are immobilized in a splint for two weeks non weight bearing with crutches followed 4 weeks in a walking boot. During which you start light physical therapy. Once you r cleared your surgeon will increase the physical therapy. Typical recovery is 6-8 weeks before u can go back to activity.

Depends: It depends on what exactly is planned for your arthroscopy; joint lining clean up, repair of talar dome lesion, ligament repair, etc. Non weight bearing can be anywhere from just a few days to as long as 6 weeks. You should discuss the surgical plan with your surgeon as he or she is best suited to fully answer this for you.
