Not much: The tonsils are glandular structures located on both sides of the back of the mouth. Tonsillitis would be any issue that triggered these to become irritated/inflamed. The throat is a generic label for all structures lining the swallowing & breathing entry. It can be sore. You can remove the tonsils, making the label tonsillitis impossible. However, many people use the labels interchangeably.

A 40-year-old member asked:
How do a sore throat and tonsillitis differ?

Dr. Heidi Fowler answered

Differences: The throat can be sore for a number of reasons. The tonsils are rounded glands where the mouth and the throat meet. The tonsils may or may not be inflammed with a sore throat. Tonsillitis is inflammation of the tonsils (might be due to infection). If tonsils are really inflammed than it is likely that they will be sore.
