Glycemic index: A high glycemic index means a food turns into sugar readily in your body. Foods containing gluten are grains, and are carbohydrates, so they have a high glycemic index. Gluten free foods can be either high or low depending on their carbohydrate content. Sugar is gluten free but has the highest glycemic index. Meat is gluten free but has a low glycemic index. There's no consistent relationship.
