Takes away cholester: It carries cholesterol away from the cells to be processed and removed from circulation, if cholesterol is garbage, then HDL represents the garbage trucks.

Remove Fat Molecules: Our body is made mostly from water, ~62% if lean. About 2/3 of the water is inside cells, 1/3 outside. The fat molecules of the cell membranes is what separates inside water from outside water. Lipoproteins fat carry fat molecules in the water outside cells, that is their function. Which fat molecules do they carry? All fat molecules, not just cholesterol. Hdl are the fat removal particles.
