Gormet vs discards?: Offal refers to the internal organs & entrails of a butchered animal, excluding muscle & bone. Some offal dishes are considered gourmet food (foie gras, pâté, sweetbreads, Scottish haggis, Jewish chopped liver, Southern chitlins, Mexican menudo). Depending on the context, offal also refers to discards of an animal carcass after butchering or skinning (heads, brains, trotters, tripe). Enjoy!?
