Very similar: UHT milk can be deficient in Vit B12, C, and thiamine, but otherwise has a slightly longer shelf life and is very similar nutritionally to HTST, or conventionally pasteurized milk. So the answer is go with the fresh pasteurized milk if nutrition is the main concern
