Swimmers Ear: Amoxicillin is not the appropriate treatment for otitis externa (swimmers ear). Staying out of the water is part of the treatment but you may need ear drops. I like ciprodex which is part steroid and part antibiotic. Your swimmer's ear may never have resolved in the first place. I would advise you see a doctor and have them look in your ear to see if you still have it.
