Several thots: A variety of sleep disorder problems may occur, such as Paroxysmal Limb Movements in Sleep (FKA nocturnal myoclonus), Restless Leg Syndrome, Sleep Apnea. Cannot fully exclude nocturnal seizure activity, but I think this is less likely, based on your description. Would start with sleep specialist, usually a pulmonologist.
