Consider a sleep aid: Prednisone is notorious for causing insomnia. If you're not already taking in the morning consider doing so. This may be dose related so waiting it out until you're down on the prednisone dose is a good option. You may also consider otc sleep aid or simply Benadryl (diphenhydramine) at night. If this last longer you may need to talk to doctor for a prescription sleep aid.

Paleo diet/low carb: The best way to improve colitis is by completely stopping high carb foods (grains, lentils, potatoes based items). Avoid nightshades (peppers, tomatoes, eggs). Avoid milk protein since it causes inflammation
Low carb foods: fish, meats, vegetables, avocados, some saturated fat (butter, coconut oil), olive oil are very effective. Take vitD3 10k IU/day. You should feel a difference in 1-4 months.
