Seroquel (quetiapine): Hi, are we talking about Manic episode of Bipolar disorder or only depression? For Manic episode treatment, the medication should be taken 2 times a day and starting dose is 100mg day one then 200mg day 2 then 300mg day 3 and 400 mg day 4, the maximum dose is 800mg, this is how I've seen it my Psychiatrist colleague doing it, For depression is given just once a day and maximum dose is 600mg,

300-600-taper-hold: For acute mania or depression or mixed, up to 300mg in 4 days to 600mg. When in remission, the lowest dose that keeps that patient in remission to avoid side effects. http://www.seroquelxrtouchpoints.com/bipolar-disorder/seroquel-xr-dosage http://www.ncbi.nlm.nih.gov/pmc/articles/PMC2515925/

Mood stabilization: It depends on the person really. Whatever works clinically, that's where it is.
