Need a blood test: You can have celiac disease with no or minimal symptoms. People with asymptomatic celiac disease may have an increased incidence of autoimmune disorders and may have nutritional deficiencies. The diagnosis is easily done with blood tests. As the question has arisen, you should see your doctor and ask him/her to test for celiac disease to find the answer.

Not really: The disease should ways flare when eating gluten. Maybe if not symptoms are not severe someone could learn to ignore / compensate.
