Insulin release: Hi. Most dairy products have some sugars in them, and they stimulate insulin release accordingly. Butter has no sugars, but is usually put on things that have sugars/carbohydrates, and as such, insulin is still released in response to the whole package. I advise nonfat dairy for everyone, not just diabetics. Heart disease is twice as likely in diabetes as it is in matched non-diabetics. Good luck!
