Unpasteurized cheese: Although required by fda to be aged 60+ days to destroy bacteria, still possible for listeria, salmonella, e. Coli or other bacteria to cause illness. [google unpasteurized cheese for list]. Pasteurized cheeses should be safe if properly cooled. Cheese may still cause problems for milk-intolerant; try lactaid/dairy ease tablets as directed to prevent symptoms. Yogurt has good bacteria to help.
