Anemia: If you are very anemic, it is possible for shortness of breath to be a symptom. As your anemia resolves, the shortness of breath should resolve if its due to the anemia.

SOB while anemic: Yes, anemia can cause shortness of breath. You probably notice it more when you are walking or otherwise exerting yourself, and you may feel like your heart is beating faster. It takes a while for your iron level to return to normal, even when you are taking a high dose of iron. Continue to take your tablets as prescribed. Take with a source of vitamin C for better absorption.
