Are U sure it wasn't: Your uvula? It's difficult to visualize your epiglottis without a laryngoscope or dental mirror. Inflamed uvula could also reduce breathing too. In either case, see your PCP for best advice.

Get seen: If your epiglottis is truly redder and getting larger you need to be evaluated by a doctor. Could be an allergic reaction or viral / bacterial infection.
