Post tonsillectomy: You should see your surgeon to determine the nature of the string of meat you saw on L side. It can be a blood clot or a strand of mucosa from the tonsillar pillar. Tonsil do not grow back in 1 week!

Tonsil: Great question. Scabs can stay on for a month and usually just fall off. Make sure you don't try to get them off as it can cause bleeding. see your ENT in f/u
