It really depends: On the type of food poisoning. Some "poisonings" occur related to a preformed toxin that a bacteria had already released into the food you ate. That type of food poisoning "hits" you foods on the order of hours. Other types of food poisoning require an incubation time for a bacteria to create problems, and that may take on the order of days, even up to a week or two!
