Congratulations: Congrats to your father for quitting alcohol, which can sometimes be a difficult thing to do. Generally, fatty liver is a reversible disease and will go back to normal with time. If your father has cirrhosis then this will not reverse. The best thing to do is continue to abstain from alcohol.
