Had a colonoscopy a year a go, normal apperance, lympcites in biopse, no evidence of uc or chrons. could i develop these diseases just a year later?

Yes: Crohns or ulcerative colitis can manifest at any time. Usually, they are associated with diarrhea, abdominal pain and occasionally blood in stool.
