Excellent question: Sensory systems such as hearing or touch don't quit working during sleep. Instead, their input is selectively ignored so the brain can continue sleeping. If the signal is strong (someone shaking you or calling your name), the inhibition is overcome, and you wake up. The same is true for the vestibular system which senses motion. Sudden changes (both starting and stopping motion) can awaken.
