EoE: Eosinophilic esophagitis or eoe is an allergic inflammatory disease of the esophagus typically caused by food proteins. Symptoms can include vomiting, abdominal pain, reflux, difficulty swallowing and food impaction due to esophageal inflammation. Treatments include topical steroids and food elimination diet. Typically, eoe is managed by gastroenterologists and allergists.

Find and fix cause: The eosinophlic response is often secondary to some sort of immune system stimulation - like an allergic type reaction. Exposure to fungal mycotoxins can be a factor. Excessive parasympathetic tone can be contributory as well. Find and fix the cause of your problem.

Eosinophils: Increased eosinophils seen on biopsy usually the more proximal the biopsy. Usually around 50 eos/high powered field is worrisome for this disease.
