Why do people who go through weight loss start acting differently?

Good or bad?: Most of the time the attitude changes because a person finally starts feeling more confident about his/her appearance and health. Exercise increases sense of well-being and improves sleep - these improve mood and lower anxiety levels. All of that results in a change in outlook, mannerism and attitude.

Interesting question: In what way do they start acting differently? Happier or less so? Many folks want to lose weight in a big hurry and that is not very advisable. That ends up "cranky fat" followed by "cranky skinny". If overweight, weight loss is very important but it is not wise to rush it. A pound weight loss a week is 52 pounds in a year and even that might be too rapid.
